Basic Muffin Recipe
You can make a variety of muffins using this recipe as the base.
Ingredients
- 3 tsp baking powder
- 1/2 tsp salt
- 1/4 cup vegetable oil
- 1 cup milk
- 2 cups all purpose flour
- 3/4 cup sugar
- 1 egg
Directions:
- Mix dry ingredients together in a large bowl.
- Make a well in the centre.
- In a smaller bowl beat egg with fork. Then stir in milk and oil.
- Pour into the centre of the flour mixture.
- DO NOT BEAT; mix quickly with a fork until just moistened.
- Add your choice of flavouring: fruit, nuts, chocolate, etc.
- Pour batter into paper muffin cups or greased muffin pan. Fill 2/3 full.
- Bake at 400°F (200°) for 25 minutes or until muffins are golden brown.
