Corn, Tomato, and Black Bean Salad

This salad is great on a hot summer day or on a picnic. It keeps well for several days in the fridge.

You will need:

1 can corn

1 can balck beans

1 large tomato

3 tbsp olive oil

2 tbsp lemon juice

¼ tsp cayenne pepper

salt and pepper

 

Method

  1. drain the corn and black beans and place them in a serving bowl

  2. wash and cide the tomato and add it to the serving bowl

  3. in a small bowl, whisk together the olive oil, lemon juice, and cayenne and salt and pepper to taste

  4. pour the dressing over the salad and toss
