Rich Pastry Pie
Crust
Ingredients:
2 tbsp. vinegar
½ tsp. vanilla
5 cups flour
1 lb. shortening
1 egg
1 tsp. baking powder
1 tbsp. sugar
Method:
- In a one-cup measuring cup beat the egg lightly. Stir in the vinegar
and vanilla. Fill with water to the 3/4 mark on the cup.
- Sift the baking powder, sugar, and flour.
- Cut the shortening into the flour with two knives or a pastry blender.
The mixture should have the consistency of lumps the size of small peas.
- Pour the liquid over the dry ingredients and stir with a fork until
the mixture comes away from the sides of the bowl.
- Form into two balls and chill several hours before rolling.
